About French Cowboys
French Cowboys is a Texas-based boutique hospitality brand and management company. We design and operate beautiful escapes easily accessible from major Texas cities, inviting guests to disconnect from the city and reconnect with what matters most.
Currently, we manage 6 boutique hotels (200 rooms) across the Texas Hill Country, with plans to add 4 more hotels (~200 rooms) across Texas over the next 24 months.
Our 10-year vision is to become the leading operator of boutique hospitality in Texas, spanning hotels, restaurants, bars, concert venues, and beyond.

Founded by Franklin and Dylan, the original “French Cowboys,” we bring a unique blend of youth, creativity, and vision to every project. Our mission is to breathe new life into forgotten places, combining Southern hospitality with a European sensibility, and creating authentic, memorable experiences for every guest.
About the Role
This is a ground-floor leadership opportunity, but it is not for someone who wants to sit behind a desk.
As Food & Beverage Director, you will roll up your sleeves and build French Cowboys' F&B program from the ground up, launching bars, coffee shops, casual food offerings, and over time, full-service restaurants at select properties.
You will be both a strategic leader and a hands-on operator, setting the vision while also jumping in where needed to open properties, train teams, design menus, troubleshoot operations, and evolve systems in real time.
